7 fresh Raspberries
2 fl oz Pisco
1 fl oz Pink grapefruit juice (freshly squeezed)
12 fl oz Demerara/Muscovado/brown sugar syrup (2 sugar to 1 water)

How to make

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of skewered raspberries.

Method

  1. MUDDLE raspberries in base of shaker.
  2. Add other ingredients.
  3. SHAKE with ice.
  4. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with skewered raspberries.

G = Grapefruit juice (preferably pink) 30ml / 1oz
D = Demerara sugar syrup (2:1) 15ml / ½oz
P = Pisco 45ml / 2oz
R = Raspberries 8 fresh

After doing this cocktail several times, I strongly suggest to use muscovado syrup. It gives a nice deepness to this very interesting cocktail.
