1/4 fl oz La Fee Parisienne absinthe
5/12 fl oz Giffard Sugar Cane Syrup
5/12 fl oz Lime juice (freshly squeezed)

Delicately sweetened lime and champagne with faint notes of aniseed from the absinthe.

History:

A lime influenced riff on Ernest Hemingway's classic Death in the Afternoon. Another version of this cocktail, apparently created at Cantineros' Club, the famous Cuban bar school, calls for a shot of Pernod anis to be poured into a chilled glass and then topped with champagne.
