Serve in a Collins glass

Ingredients:
1 12 fresh Passion fruit (fresh)
1 12 oz White overproof rum (unaged Jamaican/funky)
34 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Monin Passion Fruit Syrup
1 12 oz Brut champagne/sparkling wine

Garnish: Passion fruit

How to make:

Cut passion fruit in half and scoop out flesh into shaker. Add next four ingredients, SHAKE with ice and strain into glass filled with crushed ice. CHURN (stir) and then top with sparkling wine.

Basically a Jamaican passion fruit Daiquiri, great ! i used 25ml "REAL" passion fruit syrup and 10ml puree and omitted simple syrup since i had no fresh fruit.
