Glass:

Serve in a Flute glass

Ingredients:
1 cube Superfine/Caster/Baker's special sugar (white)
4 dash Angostura Aromatic Bitters
12 fl oz Dubonnet, Byrrh etc. rouge light quinquina
Top up with Brut champagne/sparkling wine
× 1 1 serving

Prepare:

  1. Select a FLUTE GLASS.
  2. Prepare garnish of lemon zest twist.

How to make:

  1. COAT sugar cube with bitters and drop into chilled glass.
  2. POUR quinquina and then sparkling wine into chilled glass.

Named after the deposed Spanish King Alfonso XIII, who first tasted this drink while exiled in France.

A very popular champagne cocktail (in the family) and has the distinct advantage of being so easy and quick to make.
