Ingredients:
2 oz Birch spirit/birch eau-de-vie
1 oz Strucchi Dry Vermouth
1 dash Fee Brothers Lemon Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Martini (small) glass.
  2. Prepare garnish of kalamata olive & rosemary sprig.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.

History:

Adapted from a recipe created in 2017 by Dean Railton at Vice & Virtue, Leeds, England. Deans original recipe called for 50ml Freya Birch Spirit, 25ml Noilly Prat vermouth and 1 dash lemon bitters.

Instead of Freya I used JJ Corry Fierfield birch spirit. I don't know how it compares, but it made a very nice drink! Astringent and sappy, with the powerful kick you'd expect from a true martini.
