So freaking good. Used St George Spiced Pear for the pear and it worked great. Really wish I’d had some Roquefort on hand because that really would have been brilliant

I’m with the crowd on voting to bump up the pear spirit to 30ml - it’s so delicious I could (and have!) drink it neat, and it’s nice to let its star shine bright. Massenez poire williams and Remy Martin VSOP; something like Martell would prob have been better but that’s first world problems for ya! 🤣

Dang this is a really fun cocktail. I'm kind of surprised by the lack of cognac because this is a cocktail where you get honeyed herbal pear for days. The cognac is there in the background, adding some oak and grape, but not as much as I thought it would. Really delicious cocktail though. It goes to show how underutilised fruit eau-de-vies are in the cocktail world.

Astonishigly enough - i foud the pear flavour still dominating in this drink. (Schladerer Williams Christ & Maison Gautier VSOP used)

This is much improved by an additional quarter ounce of eau de vie. Otherwise the Benedictine is overly dominant.

Initially light in the mouth, with a bit of pear and the Benedictine spices (really delicious). The cognac gradually takes over, with a warming boozy heat coming in and taking the cocktail into the finish. Sweetness, spice and cognac heat make this a great after-dinner cocktail!

Loved the herbal and honey hints provided by the Benedictine. Did fine it a little on the sweet side. After the first sip, we added 1/4 oz more eau-de-vie and it really popped the flavours.

This was delicious. Slightly sweet, almost smoky and ever so slightly pear. I used drillaud pear liquor because it’s what I have, and it is great.

Big agrees. Pear and Cognac together are transcendant! That's why I substituted St George Pear Brandy for the pear vodka in this recipe. (And the fact that I didn't have any pear vodka.) Wonderful glass full of pear bliss! Will definitely be making this again.

Agreed! I've switched to pear eau-de-vie. Many thanks.

Glad to see we all had the same instinct! I can't imagine using flavoured vodka for this drink if you have any pear eau de vie on hand.
