I really think this recipe should be the definitive French Martini recipe. Balanced, not too sweet, but still more than approachable and rich. I used my 'Chambord mix' of raspberry syrup, blackberry liqueur and dark creme de cacao (the last one for the chocolate truffle sort of note).

Great beginning, you get the Bianco in the middle and a pineapple finish. It's a wonderful ride!

Aye cracking, i think its quite dangerous as it does not taste boozy in the least and i think these could creep up on you

made using vermouth ( from the book ) might try with cinzano and see how much of difference there is

Drier than the French Martini and much more to my taste - could become a Friday night classic!

Looking at the comments before we made this, I think this recipe is a winner. It was very flavourful with herbal hints along with the sweetness of the remaining ingredients. Wonderful as an aperitif.

The best I can say, is the cocktail is OK, but not one I would make again. The pineapple taste was completely lost.

This cocktail obviously needed more attention so I have once again revisited. Swapping dry for bianco vermouth seems to have greatly improved it. Thanks for bringing to my attention. Great to know your thoughts on new spec.

I thought this was better balanced with 1.5oz pineapple juice.

Agreed! This led me to make and try 5 more versions of this cocktail to end up with the amended recipe above.
