Delightful cocktail. As with most, we found it a bit sweet, but we tend to like dryer cocktails.
Next time, will half the sugar syrup and increase slightly the lime. My issue may be our limes as they are grown locally and tree ripened so they do tend to be a bit sweeter.
Would definitely have again.

Especially liked the aroma from a really good lime zest. Pairs well with the apricot liqueur and definitely one to revisit.

Also used Redbreast 12 and this was absolutely heavenly. So smooth it was like drinking melted butter (in the best possible way).

Excellent - very palatable. Tweaked to make a touch more dry: 60ml Redbreast 12, 10ml of Giffard Apricot & 7.5ml simple.

I recently tried this with somewhat different ratios (20ml lime juice, 15ml apricot liqueur, 1 teaspoon of powdered sugar)
The result was really nice, like a Sidecar with Irish vibes.
