Again, I used husk cane spirit from tumbulgum. It is a very good cocktail, but to my taste it is not really like caipirinha because muddling the limes puts much more zest into a caipirinha. This is really like a daiquiri with funk. I preferred a mint garnish as well.
You really, really need to like the funk of Agricole cane syrup ruhms. We used Clairin Sajous instead of Cachaca as I like the Haiti version better. Sajous comes in at 111 proof. Did add 2 drops of Difford's Daiquiri bitters. Was very good, but need a few minutes to breathe. First out it is a bit like lighter fluid and rubber. Softens to a delightful cocktail with still a definite Agricole funk kick.
Thanks for reminding me of this cocktail, John. It's been years, probably decades, since I last made one. I've tweaked the proportions and added the all-important Daiquiri Bitters.
