Today I used 3 drops saline solution and found that this mellowed the taste instead of lifting it, which I expected.

Really excellent - definite Green Chartreuse accent on the daiquiri, and IMO the chartreuse raises the booziness feel a bit. A great way to enjoy both Green Chartreuse and Chartreuse elixir - not overwhelming, but flavors are prominent against the background of a classic rum/lime cocktail.

In lieu of cane syrup, I used 1/4 oz simple syrup and substituted 1/2 oz of the white run with 1/2 oz of cachaça to provide the sugarcane flavor. I can’t make the original to compare, but it tastes pretty good to me. The Chartreuse is somewhat overwhelmed by the cachaça though, so it might help to reduce the amount of cachaça to 1/3 or even 1/4 oz.

I prefer 3 yo rum which has a rounder, more typical taste.

A question @simondifford: I there a version which uses the real Chartreuse Elixir?

I just tried with a dash of Chartreuse Elixir and all the better for it so now added above. Thanks.

Very nice daiquiri. Fruity but with a subtle bitterness. I didn’t have any sugar cane syrup so I substituted it with maple syrup which actually worked out quite well.

Any ideas about substituting the cane syrup for a similar sweetness level? Unfortunately it’s not available in my area, but not sure which would be the best stand-in syrup — simple, rich, agave, etc.

Interesting combination of ingredients and great flavours in this cocktail. The sirop de canne and Chartreuse add an interesting undertone to the normal Daiquiri.
