Had this again with a California Bourbon which added a slight spicy (savoury; not hot) touch to the after taste. Left out the syrup to make the final cocktail dryer. Wonderful. Getting elevated up to my favourite cocktails.
A really delicious tiki drink, I especially like the bourbon backbone. Pineapple works very well with the bourbon and lemon. I used allspice dram in place of the pimento bitters (not available locally, and $20/5 oz on Amazon) - I didn't really make much of an impact (maybe the bitters are worth it?)
Macerated a chunk of pineapple in the shaker for extra fruit, used half lemon/half lime juice and orgeat instead of syrup. No DeGroff bitters but I do have homemade, unsweetened pimento dram so used a tsp of that instead. Did somebody say Tiki?!
I used orgeat syrup instead of sugar as recommended, upped the lime juice to 25 ml and the pineapple juice to 30 ml.
Great drink, quite dangerous too, as it goes down super easy.

Used Rittenhouse and it was delicious. We decided to add some Amaretto as one reviewer suggested (minus the simple) and it tastes like a Whiskey Mai Tai. Definitely a keeper!
This is delicious. Somewhat a tiki drink, but not sweet. The use of Bourbon is perfect. Happy Birthday, Hawai'i - the only state with the Union Jack on its flag.
