A favorite go to when the mint is fresh, this is a fabulous Daiquiri. Thoroughly enjoyed with a gold/light rum split, but made it this time with Carta Blanca and a spoon of Hamilton 86 Demerara River rum. My mint is probably mentha canadensis, wild mint, which has a more profound menthol/peppermint flavor than spearmint. Flawless!!!

Oh and of course don't forget the Difford's Daquiri Bitters. Bob's Bitters are the best.

Nice Daiquiri variation but with Carta Blanca it is somewhat bland, although I added some drops of saline solution. I would change for Havana Club 3yo next time.

I made this with Bacardi Carta Blanca before reading the comments. Bacardi was bland. Rhum Barbancourt 8 was worlds better. Appleton Estate is very finicky for me. Rarely is it fantastic in a drink but, when it is, it's amazing... FYI, I did viciously muddle the mint, to my taste.

The mint adds a refreshing coolness to an otherwise conventional daiquiri - I’m a fan! And Plantation 3 Stars white rum works just fine.

I found this a perfect blend of mint and Bacardi, just having the one I think. Sour but backnotes of sweetness made this a great take on a ‘small’ mojito

I found the mint very overwhelming. Just left me disappointed I couldn't really taste the nice Appleton Estate I put in there. Somewhat surprised by how much this disappointed me.

To be honest, Appleton Estate does not work in this sort of Daiquiri. It needs a much lighter rum to work. I used Havana Club 3, and it worked way better. It was beautifully minty with tartness and acidity, and a tiny wisp of sugar.
