"Imperfekto" is an initiative that collaborates with community heroes who are committed to driving change in the hospitality industry and creating a sustainable cycle for products used in homes, restaurants, bars, and supermarkets.

Our creativity, perseverance, and bravery define us as Colombians. That's why we are always striving to innovate and address challenges with creative solutions. At Imperfekto, we collaborate with community heroes who are committed to driving change in the hospitality industry. We aim to create a sustainable cycle for products used in homes, restaurants, bars, and supermarkets.

The foundation consists of five fundamental components:

  • The collection of organic waste is produced by bars, restaurants, cafes, homes, and supermarkets.
  • Transformation of organic matter into compost, fertilizers and natural fermentation sources for new processes.
  • Planting agricultural products using these fertilizers and organic compost while also using the organic matter to create unique coffee profiles in collaboration with Felipe from Coffeelipe And Friends.
  • Harvesting the new products and distributing them to those involved in the project, who contribute their organic waste monthly, thus receiving fresh organic products in return.
  • Educational training to raise awareness in the community about the importance of waste separation.

Logistics are managed in collaboration with Be-Eco for the collection and handling of organic waste. This operation is financially sustained through a monthly subscription, allowing each business or family to be part of the project and receive a shipment of organic, fresh foods each month, positively impacting more than 250 people.

Imperfekto Cocktail

30ml Ketel One Vodka
30ml Cucumber, strawberry and tomato clarification ( Organic )
45ml Fermented coffee cherry and green tea

Garnish: Fresh organic cucumber
Aroma: Extraction of coffee blossoms and orange blossoms
Method: Shake
Type of ice: Ice Cube

Processes of each ingredient:

Cucumber, strawberry and tomato clarification:
Ingredients:
Fresh tomato - 10 grams
Fresh cucumber - 10 grams
Fresh strawberry - 10 grams
Ketel One Vodka - 100 grams
( All ingredients are organic from the Imperfekto project)

Combine and process the ingredients and leave to stand for 2 hours.
Filter and bottle for use.

Fermented coffee cherry and green tea:
Ingredients:
First fermentation:
400 ml hot water
8gr green tea
60g sugar
300 ml cold water
400 ml kombucha
1 scoby

Preparation:
Add the tea and sugar into the hot water, leave to steep for 4 minutes, strain and add the cold water. When it is at room temperature, add the kombucha and scoby.
Cover and store in a dark place for 5 to 7 days.

Second fermentation:
750 ml kombucha
100 g coffee husk

Preparation:
Add everything in a bottle, seal and let stand for two days before use.
