"Shared Waste is a community project aimed at connecting the community around bars, restaurants and cafés through our waste. Finding smart ways to use waste that is still full of life and sharing it between venues makes the industry greener and is good for people, planet and profit. Shared Waste is a community initiative where venues at all times can inform about through a web forum what waste they have, and see what waste they can get from other places.

The cocktail , also named Shared Waste, is meant to be an example of how we can use wasted ingredients: Made from watermelon rind, flat sparkling wine, spent citrus and strawberry tops and everything plays into its vibrant and fresh taste. It's a cocktail already garnished with good but also encourages to be garnished with whatever the bar has available at the moment. An easy tipple that starts a conversation where the end goal is that everyone who wants can join in and Share their Waste. As a forum it can be an arena to give waste to other places, but also teach the community more about how to use waste in inventive and efficient ways. There is so much waste that could be used that unfortunately isn't and my goal is a hospitality industry more aware on how to best use all of our ingredients and minimize unnecessary waste."

Shared Waste

Glass: Nude Highball
Garnish: Dried lime powder
Method: Build the cocktail in the glass, preferably soda water first for ingredients to mix properly.
Ice: Clear ice spear

Ingredients:
40 ml Ketel One Family-Made Vodka
30 ml Shared Waste cordial
100 ml Soda water

To make Shared Waste cordial:
Cover equal parts watermelon rind and sugar and vacuum. Do the same for strawberry tops. Vacuum and let sit overnight. Reduce flat sparkling wine by 1/4 with 5g cardamom seeds.

To make Dried lime powder:
Dry lime zest and grind into a fine powder.
