One of the wildest drinks I've had. I could not imagine what flavor profile to expect. Tasty for sure, but nothing I'd have more than once. Even with only 10 ml, the mezcal dominates with sherry and pineapple in the background. Not as bitter as the three bitter components might suggest.

With Havana Club 7 y/o, Scrappy's Bitters Cardamom and demerara syrup (2:1), I did find this a bit on the sweet side and cardamom heavy. Next time I will dial up the sherry and down the syrup and bitters.

Good shaken, even better stirred.
I used Fino Sherry instead of Dry Vermouth and this resulted in a dryer, even more delicious cocktail.
Can kümmel liqueuer be replaced with aquavit and simple syrup in a cocktail?
