2 fl oz Hayman's London Dry Gin
12 fl oz Lemon juice (freshly squeezed)
14 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
12 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer

How to make

Glassware

Serve in a Flute glass

Prepare

  1. Select and pre-chill a FLUTE GLASS.
  2. Prepare garnish of lemon zest twist.

Method

  1. POUR liqueur into base of chilled glass.
  2. SHAKE other ingredients with ice and strain back into shaker.
  3. DRY SHAKE (without ice) to emulsify.
  4. Carefully FINE STRAIN into the liqueur-primed glass so contents of shaker float over liqueur.

Garnish

  1. EXPRESS lemon zest twist over the cocktail and discard.

This cocktail is mentioned in O. O. McIntyre's New-York-Day-By-Day column in The Washington Herald on the 24th November 1915, "Sailors who come to Broadway for a touch of high life have invented a new drink called the Submarine Kiss." "The liquid combination is a milky white above and purple below and the submarine effect is secured after drinking about three."

We photographed this cocktail 15+ years ago, long before I started recording details of the glasses used. However, I suspect LSA (https://www.lsa-international.com/drinkware/champagne-glasses) but I doubt still available.

Quick question: why is the picture so distinctly red in the bottom, rather than purple or blue?

Good question and thanks for bringing to my attention. The answer is that this cocktail should be made with Crème Yvette and not Crème de Violette. I have now corrected the recipe.
