Ingredients:
1 13 fl oz Light gold rum (1-3 year old molasses column)
23 fl oz Aperitivo Luxardo (Aperol-style liqueur)
23 fl oz Pineapple juice
23 fl oz Lime juice (freshly squeezed)
13 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)

Prepare:

  1. Select and pre-chill a JULEP TIN.
  2. Prepare garnish of dehydrated pineapple slice wheel.

How to make:

  1. SHAKE all ingredients with ice.
  2. STRAIN into glass or julep tin filled with crushed ice.

Garnish:

  1. Garnish with pineapple slice.

I like a Jungle Bird but I have to agree with Mike Beatty, since I also preferred this drink for the same reasons, in fact I like to showcase the tropical note a little more by adding an extra 10ml or 1/3oz of pineapple juice, in exchange for 2.5ml or 1/12oz less simple syrup, might try adding 1 dash of aromatic bitters next time

To my tastes, this is much better than a jungle bird. The aperol plays better with the pineapple then the campari
