Ingredients:
1 12 oz Light gold rum (1-3 year old molasses column)
34 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
0.04 oz La Fée Parisienne absinthe
1 dash Orange Bitters by Angostura
3 drop Saline solution 4:1 (20g sea salt to 80g water)
14 oz Chilled water omit if using wet ice

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of grated nutmeg.
  3. SHAKE all ingredients with ice.
  4. STRAIN into chilled glass.
  5. Garnish with dusting of nutmeg grated over cocktail.

PAULINE COCKTAIL.
(6 people)
3 Glasses Rum.
3 Glasses Sweetened Lemon Juice.
1 Dash Absinthe Bitters.
A little Nutmeg, grated.
Shake well and strain into cocktail glass.

Sounds great but mine was very sour - even by my standards. Could have just been a high- powered lemon. Will try again with maybe a bit more sugar syrup….

Refreshing with a hint of the absinthe. Initially forgot the nutmeg garnish, but the nutmeg is critical as it softens the edges of the cocktail. Had with some goat cheese and fresh strawberries. Perfect.
