How to make:
SHAKE all ingredients with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.
1 1/2 fl oz | Light white rum (charcoal-filtered 1-4 years old) |
1/2 fl oz | Gold rum (1-3 years old mellow light) |
3/4 fl oz | Lime juice (freshly squeezed) |
1/2 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
8 drop | Difford's Daiquiri Bitters |
1/2 fl oz | Pasteurised egg white (or aquafaba) |
