Ingredients:
1 12 fl oz Hayman's London Dry Gin
13 fl oz Cointreau triple sec liqueur
12 fl oz Lime juice (freshly squeezed)
14 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
13 fl oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer
2 drop Saline solution (20g sea salt to 80g water) or merest pinch of s
13 fl oz Thomas Henry Soda Water chilled

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lime zest twist.

How to make:

  1. SHAKE first 6 ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) and fine strain into chilled glass.
  3. TOP with soda.

Garnish:

  1. Express lime zest twist over the cocktail and use as garnish.
