Glass:

Serve in a Fizz or Highball (8oz to 10oz)

Ingredients:
2 oz Brandy, whisk(e)y, gin, rum etc.
1 oz Freshly squeezed lemon or lime juice
23 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
23 oz Egg white
8 drop Bob's Ginseng Bitters optional
2 oz Thomas Henry Soda Water chilled
× 1 1 serving

Prepare:

  1. Select and pre-chill a FIZZ OR HIGHBALL (8OZ TO 10OZ) GLASS.
  2. Prepare garnish of quarter lemon slice wheel.

How to make:

  1. SHAKE first 5 ingredients (all but soda water) with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass and place in a freezer to allow the foam head to form a layer.
  4. After a minute or so, slowly POUR soda from a higher-than-normal height to raise the foaming head above the rim.

Garnish:

  1. Garnish with quarter lemon wheel on rim.

Review:

For those who prefer their Gin Fizz mellowed and fluffed by the addition of egg white.

It's possible to make a fizz with a visually appealing head raised far above the glass rim, but the extra soda poured to achieve this thick head creates an overly diluted cocktail that's only accessible after gulping through all that foam.

Had an Autumn themed party and started the evening with a Damson Gin variation of this offering a lovely pink clolour. Dialled back the amount of damson gin slightly (50 ml rather than 60 ml) and used shop bought soda water. Found out that the addition of the soda really increases the foamy top. Be prepared for that.
