23 oz Rhum Clément Créole Shrubb liqueur
23 oz Pineapple juice
12 oz Lime juice (freshly squeezed)
14 oz Difford's Falernum liqueur
16 oz Monin Pineapple Syrup

Garnish: Dehydrated pineapple slice & Luxardo Maraschino Cherry with mints sprigs bouquet

How to make:

SHAKE all ingredients with ice and fine strain into a glass or julep cup filled with crushed ice.

History:

Adapted from a recipe created at the Bang Bang bar in Teeling Whiskey Distillery in Dublin Ireland. Unsurprisingly, this riff on a Mai Tai was originally based on Teeling Small Batch Irish whiskey.

"Redleg" is a pejorative term to refer to poor white immigrants to the Caribbean islands, particularly Irish immigrants to Barbados forced to work the sugar plantations during the 17th and 18th centuries. The name derives from their sunburnt fair-skinned legs due the strength of the tropical sun.

The injustices suffered by Irish immigrants are remembered in the ballad To Hell or Barbados and in the title of the June 2007 studio album by Irish singer-songwriter Damien Dempsey.
