Serve in a Coupe glass

Ingredients:
7 fresh Mint leaves
2 oz Hayman's London Dry Gin
34 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 drop Saline solution 4:1 (20g sea salt to 80g water)
1 oz Brut champagne/sparkling wine chilled
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of mint leaf.
  3. Lightly MUDDLE (just to bruise) mint in base of shaker.
  4. Add next 4 ingredients (all but sparkling wine) and SHAKE with ice.
  5. FINE STRAIN into chilled glass.
  6. TOP with sparkling wine.
  7. Garnish with mint leaf.

Very good drinkable, but not very interesting. Maybe a splash of bitters could improve that.
