Ingredients:
2 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Strucchi Rosso Vermouth
12 oz Lemon juice (freshly squeezed)
12 oz Monin Vanilla Syrup
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
2 leaf Kaffir lime (fresh fruit)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of kaffir lime leaf.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. Garnish with kaffir lime leaf.

Fresh Kaffir lime leaves are hard to find. I wonder if I can get away with dry leaves (maybe rehydrated?).

Fresh Kaffir lime leaves are available from major supermarkets, Amazon and other online retailers in the UK but frozen Kaffir lime leaves are also an option.
