5/6 fl oz Lime juice (freshly squeezed)
2/3 fl oz Rhubarb syrup
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lime wedge.

Method

  1. SHAKE all ingredients with ice.
  2. STRAIN into ice-filled glass.

I didn’t have the rhubarb syrup, so substituted it with 20ml Santoni Amaro (Iris Flower and Rhubarb) and 15ml of sugar syrup. Absolute triumph! Lipsmackingly delicious. Nicely tart (just how I like it rather than sweet).

I believe the Monin rhubarb syrup is not representative of a good rhubarb flavour and this cocktail is much better with William Fox rhubarb syrup.

Should be either 2/3 shot or 3 drop rhubarb syrup, both is too much
