Serve in a Flute glass

Ingredients:
2 oz Patrón Silver blanco tequila
1 oz Lime juice (freshly squeezed)
13 oz Agave syrup
1 oz Brut champagne/sparkling wine
× 1 1 serving

How to make:

  1. Select and pre-chill a Flute glass.
  2. Prepare garnish of dehydrated lime powder on outside of glass.
  3. SHAKE first 3 ingredients with ice.
  4. STRAIN into chilled glass.
  5. TOP with sparkling wine.

History:

Adapted from a recipe created by Dre Masso in 2005, the year he was part of the team behind the opening of Green & Red Mexican Cantina in Shoreditch and while creating cocktails for his book, Margarita Rocks.

I experimented with different versions of the more traditional margarita recipe and the Tommy's style, which I ended up preferring. This cocktail combines two of my favourite tipples; The Tommy's Margarita and Champagne.

And we like to reduce the Agave syrup to 5ml and add 10ml Orange Curacao or Triple Sec, depending on the dryness we're looking for.

We're clueless as to how this didn't get a gig amongst the twenty best Champagne cocktails.

Perfect cocktail. Even with no salt, there is a hint of salt in the aftertaste probably from the Champagne mixing with the ingredients. Great alternative to Champagne at a dinner which is a bit more spicy and flavourful.
