1 fl oz	Lustau Jarana Fino Sherry
¹⁄₂ fl oz	Light white rum (charcoal-filtered 1-4 years old)
¹⁄₂ fl oz	Chamomile/Camomile liqueur
¹⁄₄ fl oz	Strucchi Bianco Vermouth
1 dash	La Fée Parisienne absinthe
3 drop	Saline solution (20g sea salt to 80g water) or merest pinch of s

How to make

Glassware

Serve in a Coupe glass

Prepare

Select and pre-chill a COUPE GLASS.
Prepare garnish of sprig of Gypsophila (Baby's Breath) or elderflower.

Method

STIR all ingredients with ice.
STRAIN into chilled glass.

Garnish

Garnish with a sprig of Gypsophila (Baby's Breath) or elderflower pegged to rim.

We don't have Chamomile Liqueur and have no idea what it tastes like. But since one of the two suggested garnishes is elderflower, we thought we would substitute Elderflower for the Chamomile Liqueur. We can't compare it to the recipe as specified but enjoyed it. And since we had a pork hock in the oven, yes we were anticipating something special. Thanks to our good host for another delightfully elegant creation.
