Ingredients:
1 12 oz Rémy Martin V.S.O.P. cognac
23 oz Disaronno amaretto
12 oz Lustau San Emilio Pedro Ximénez Sherry
23 oz Lemon juice (freshly squeezed)
1 dash Peach bitters
1 dash Black walnut bitters
14 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. EXPRESS lemon zest twist over the cocktail and use as garnish.

Ahhh... This is a 4.4+ stars... On the verge of hallowed greatness... nutty and citrus oily... it's dry, but I wouldn't squeeze the cane much in this... something missing that would electrify this...
