Ingredients:
1 13 fl oz Nonino AnticaCuvée Riserva 5 Year Old Grappa
12 fl oz Amaro Nonino Quintessentia
16 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
3 dash Angostura Aromatic Bitters
34 fl oz Thomas Henry Soda Water chilled

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of 3 skewered maraschino cherries.

How to make:

  1. SHAKE first 4 ingredients with ice.
  2. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).
  3. TOP with soda water.

Garnish:

  1. Garnish with skewered cherries.

History:

Adapted from a recipe created by bartender Simone Maion at BU.CO Burger & Cocktail in Città Fiera, Udine, Italy. Simone's original recipe calls for 40ml Nonino Chardonnay in Barriques Monovitigno Grappa, 15ml Amaro Nonino Quintessentia, 2 sugar cubes, 3 dashes Angostura Aromatic Bitters and a splash of soda.

Delicious. We served it as an aperitivo (upping the soda a tad and garnishing with a couple of skewered fresh red grapes) with a full-flavoured English Brie.

We also reduced a bit the aggregate volume per serve and served it in Nick and Nora glasses...no ice.
