Ingredients:
1 fl oz Poire William eau-de-vie
12 fl oz Belle de Brillet pear liqueur
12 fl oz Orange juice (freshly squeezed)
12 fl oz Lemon juice (freshly squeezed)
13 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s
1 23 fl oz Brut champagne/sparkling wine chilled
× 1 1 serving

Prepare:

  1. Select and pre-chill a FLUTE GLASS.
  2. Prepare garnish of pear wedge.

How to make:

  1. SHAKE first 6 ingredients with ice.
  2. FINE STRAIN into chilled glass.
  3. TOP with sparkling wine.

Garnish:

  1. Garnish with pear wedge on rim.
