Review:

By Elias Stergiopoulos, Baba Au Rum

“The vine as a plant and the grape as a fruit have always exerted a great influence on me. Grapes, since ancient times, were a symbol of joy, fertility and abundance. As far as I can recall, there was always a vine-pergola in my family house. It made the garden look beautiful and it offered its precious shadow as a shelter during the hot summer days.

Vines remind me of France. Probably the most fertile land of Europe, both in terms of quantity and variety of its products growing in its valleys, as well as on its mountains.

I consider the grape a symbol of power, abiding as a tattoo. Grape is the raw material for making cognac, which, on its turn, is the basis for my Hennessy based cocktail. Apple, which is another powerful, yet symbolically misconceived fruit, is also present in my cocktail. As an epilogue for my story-in-a-glass I have chosen to use absinthe and two drops of celery bitters.

I present you “Green as Grass” − a cocktail dominated by green colour, the symbol of harmony and growth.”
