Glass:

Ingredients:
2 12 oz Lustau Amontillado Los Arcos Sherry
34 oz Yellow Chartreuse (or génépy liqueur)
12 oz Framboise/raspberry eau-de-vie
2 dash La Fée Parisienne absinthe
2 dash Burlesque bitters
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lemon zest twist and Luxardo Maraschino Cherry.

How to make:

  1. STIR all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish:

  1. EXPRESS lemon zest twist over the cocktail and discard.
  2. Garnish with skewered maraschino cherry.

History:

The Glee Club Cocktail first appeared in Tim Daly's 1903 Daly's Bartenders' Encyclopedia and comprised "2 dashes of orange bitters, 1 dash of yellow Chartreuse, 1 dash of maraschino, 1 wine glass of raspberry wine."

This recipe, adapted from one by Jack McGarry at New York's Dead Rabbit, uses framboise eau-de-vie in place of raspberry wine.

Alcohol content:

  • 1.7 standard drinks
  • 21.25% alc./vol. (42.5° proof)
  • 24.2 grams of pure alcohol

Incredibly complex and interesting. First of all, you need to love Amontillado sherry to like this cocktail. It's obviously going to dominate most of it. The eau-de-vie is a great counterplay to it though, making it fresh and interesting. The chartreuse adds some herbal complex and sweetness which balances the whole experience. Not sure if I get the bitters too much but the absinthe provides a nice accent.
