How to make

Glassware

Serve in a Coupe glass

Prepare

Select and pre-chill a COUPE GLASS.
Prepare garnish of lime zest twist and dehydrated lime slice wheel.

Method

SHAKE all ingredients with ice.
FINE STRAIN into chilled glass.

Garnish

Express lime zest twist over cocktail and discard.
Garnish with dehydrated lime wheel.

History

Adapted from a recipe created in 2019 by George Hunter, this is the cocktail with which he won the South African final of Bacardi's Legacy bartender's competition, taking him and his cocktail through to the global final.

George created his recipe in Johannesburg, South Africa, where Bacardi Ocho is 43% alc./vol..
George's original recipe:

Cazador
60 ml Bacardi Ocho
30 ml Fresh lime
15 ml Maple syrup
10 ml Crème de cassis
Absinthe rinse

"Cazador is my surname in Spanish (Hunter). The cocktail has been created to represent triumph and lessons learnt. Cazador is a symbol to remind people never to give up and to push through hard times. I started my career as a barback on minimum wage; I worked hard every single day to learn more and grow as a bartender. The first time I entered Bacardi Legacy, I didn't even make it out of the first round. Six years later [2019], I entered again & won the national event in South Africa and got to represent my country on the global stage."

It's an original drink, I liked how the absinthe gives it an interesting twist after the first sip.

I agree, be careful with the absinthe as it can overwhelm.

Overall it's a nice drink and I feel the maple brings out the flavour of the rum.
