Serve in a Collins glass

Ingredients:
2 12 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Cream of coconut (e.g. Coco Lopez, Re'al etc.)
3 oz Pineapple juice
14 barspoon Xanthan gum (E415) optional
× 1 1 serving

Prepare:

  1. Select and pre-chill a COLLINS GLASS.
  2. Prepare garnish of pineapple wedge, Luxardo Maraschino Cherry and mint sprigs.

How to make:

  1. DRY BLEND (without ice) first 3 ingredients on slow setting and then gradually add Xanthan gum while continuing to blend.
  2. Add 7oz scoop of crushed ice and BLEND some more.
  3. POUR into chilled glass.

Garnish:

  1. Garnish with mint sprigs bouquet and pineapple wedge skewered with cherry on rim.

History:

Bahia is one of Brazil's 26 states. It is also a pre-Prohibition drink containing dry vermouth, sherry, absinthe and bitters. This more recent Piña Colada-style offering has more mass market appeal.

Very easy to drink and to make, AND it has a lot of Rum. I did split the Rum between Havana Club and Cachaça (since Bahia is a Brazilian state). Not overly complex but a nice hot day deck drink. I can see where just Cachaça would be great too.
