Serve in an Old-fashioned glass

Ingredients:
3 oz Pineapple juice
1 oz Lemon juice (freshly squeezed)
14 oz Monin Vanilla Syrup
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
3 dash Angostura Aromatic Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of pineapple wedge.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into ice-filled glass.

Delicious drink. Pineapple followed by lemon and vanilla. The egg white combined with the bromelain makes for a superior foam.

what exactly is the vanilla sugar syrup?

Sugar dissolved in water infused with vanilla to a sweetness of circa 65 brix. Homemade (2 mugs white sugar to 1 mug water) or buy a brand such as Monin.
