13 oz Bittersweet orange-red aperitivo
23 oz Lemon juice (freshly squeezed)
12 oz Monin Vanilla Syrup
16 oz Framboise/raspberry eau-de-vie
16 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

History:

The British Bacardí Legacy 2013 winning cocktail winning drink created by Chris Moore at The American Bar in The Savoy Hotel, London, England.

For me, Cuba is the enchanted isle. I took my inspiration from Cuba in the 1920s when Americans were invited to visit as. In particular, high society circles came over and this had a knock-on effect on society in general. It was also a time when more ladies were entering bars, which drove the trend for a more delicately balanced drink.

A lovely delicate drink, and not too alcoholic. I reduced the lemon juice slightly, which we thought improved it still further. The colour is beautiful, too.
