Adapted from a recipe created by Petros Binas at Istioploikos restaurant in Mikrolimano, Pireaus, Greece, this was one of ten winning recipes in the 2021 O/Purist Quest. Petros explains, "Theano Thuria, the ancient Greek philosopher and mathematician who dealt with the harmony of the universe, came from Croton in southern Italy. My cocktail is my attempt to expand its theory into the world of drink. I created a cup which, guided by the O/Purist Tsipouro, brought in harmonious flavours and aromas from the enchanting mountain forests to the sunny plains of the Mediterranean."
Reminiscent of a Cobbler, I like the connection and balance between the tsipouro and red wine in this recipe with triple sec, maraschino, and Creole biters extenuating as much as flavouring.
