12 fl oz Lime juice (freshly squeezed)
16 fl oz Demerara/Muscovado/brown sugar syrup (2 sugar to 1 water)
2 fl oz Thomas Henry Ginger Beer

Garnish: Skewered lime slice wheel

Serve in a Collins glass

Method:

SHAKE first 4 ingredients with ice. Open shaker and slowly pour ginger beer over other ingredients in shaker, then strain into ice-filled glass.

A 'Buck' is a tall spirit-based cocktail with ginger ale or ginger beer and lime juice. This particular Gin Buck is distinguished by also being based on sherry, which comes from Jerez in Andalucia, Spain – hence the name.

This is a fantastic drink. Clearly not in the wheelhouse of the average drinker. A touch too sweetish for my taste - I used Fever Tree ginger beer (to blame?) - but then again no. I used Gordon's Gin and I can only imagine where this could go with a higher-quality spirit.

A dry, complex cocktail. The Amontillado sherry is the most prominent flavor ( I used a Jerez Amontillado) with the ginger beer being second-most prominent. The nuttiness/dark fruit of the sherry combines well with the ginger beer and is nicely finished with the citrus sourness. A lot of flavors present in this one.
