Glass:

Serve in an Old-fashioned glass

Ingredients:
2 oz Cognac (brandy)
2 drop Vanilla extract/essence
1 pinch Cinnamon powder (ground)
14 oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
34 oz Milk (whole milk/full 3-4% fat)
34 oz Whipping cream
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of grated nutmeg.

How to make:

  1. SHAKE all ingredients with ice.
  2. STRAIN into ice-filled glass.

Garnish:

  1. Dust with freshly grated nutmeg.

History:

Adapted from a recipe purloined from Charles H. Baker Jr's classic book, The Gentleman's Companion. He first discovered this drink in April 1931 at Gerber's Snug Bar, Peking, China.
