Ingredients:
2 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Honey syrup (3 parts honey to 1 water by weight)
0.04 oz Vanilla extract/essence
1 oz Brut champagne/sparkling wine
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE first 3 ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. TOP with sparkling wine.
  6. EXPRESS lemon zest twist over the cocktail and use as garnish.

I love sweet drinks but this one may be a bit too sweet. I thought of adding some lemon juice but then I’d have a honey sweetened French 75. I’ll make it again but only when I’m imbibing alone. No one else I know likes them this sweet.

I found 1/2 tsp to be an overwhelming amount of vanilla extract, and cut it back to 2 dashes.
