How to make:

MUDDLE basil in base of shaker. Add other ingredients, SHAKE with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.

12 fresh Basil leaves
1 2/3 fl oz Light white rum (charcoal-filtered 1-4 years old)
2/3 fl oz Apple juice (cloudy & unsweetened)
1/2 fl oz Lime juice (freshly squeezed)
1/4 fl oz Passion fruit syrup
1/6 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
1/3 fl oz Pasteurised egg white or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer

Hazardous ingredients

Pasteurised egg white is potentially hazardous to those with allergy or intolerance.

Review:

Take a simple Daquiri and add apple juice, fresh basil and passion fruit syrup, plus a splash of egg white to give a foaming head, and you have an Amalia.

History:

Adapted from the Latvian Bacardí Legacy 2014 winning cocktail created by Robert Kalvans at Cheers Bar in Riga, Latvia. Robert's original recipe called for 45ml Bacardi Carta Blanca, 20ml apple juice, 20ml passion fruit syrup, 15ml Lime juice, 10ml egg white, and 10 fresh basil leaves.

I have always been interested in logos of different companies and was inspired by the Bacardí logo and the story it tells. In 1862 the wife of Facundo Bacardi was walking along a distilling factory and heard the sound of bats under the roof. So she suggested the bat as their logo, symbolising health, happiness and success. Thus the bat became one of the most recognizable logos in the world

This story inspired me to make a cocktail in honour of all women who give us inspiration and strength with their passion, beauty and love to do great things. And the wife was called Amalia; I named my cocktail in honour of her and of all women.
