12 fl oz Lemon juice (freshly squeezed)
13 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
12 fl oz Egg white (pasteurised) or 3 dash Fee Brothers Fee Foam cocktail foamer
4 drop Chartreuse Élixir Végétal (optional)

How to make

Glassware

Serve in an Old-fashioned glass

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare rosemary sprig for garnish.

Method

  1. SHAKE all ingredients with ice.
  2. STRAIN back into shaker.
  3. DRY SHAKE (without ice).
  4. FINE STRAIN into ice-filled glass.

Adapted from a recipe created by Fred Charlet at La Cabane, Strasbourg, France. Fred says, "With this cocktail, I wanted to remember playing in grandpa's garden hut as a child while my family was sat in the garden enjoying an aperitif. This cocktail is an anthem to our childhood."

Very nice, the gentian comes through clearly and the Chartreuse adds some nice background complexity. I am thinking of trying it with some thyme liqueur to contribute to the colour and theme of the drink.

I liked this as per the recipe given, but just got a bottle of Chartreuse Elixir Vegetal so thought I add some; 3-4 drops really elevated the cocktail and would highly recommend trying!
