First off, first time, over dilution just killed this for me. Second, my opinion is skewed and biased from using (first, gin - but also) the very distinct Barr Hill honey (a raw honey might yield similar results for you). Properly, delicately diluted, this is amazing. Give it to me all day. Gin tops white rum with lime. I can't deny.

Ford's and Nate's Organic raw honey made a fine swill, but not an eye-popping, 5-star madness like with the Barr Hill.

Also went with a botanical Gin (Botanist). Great combination of flavors. The honey is very prevalent on the nose, but it gets a little bit lost in the palate. Great citrus overtones with a nice gin finish.

Great mixture of ingredients. Simple and refreshing. Gin give some nice herbal tones with the honey syrup. Great as designed.
However, since we saw this basically as a daiquiri made with gin. After tasting, we added the equivalent of 4 drops of Difford's Diaquiri Bitters. Pulled the flavours to a new level. Either way it is great.

Personally I prefer this over a Bee's Knees, & this recipe made with Esme botanical New-Age Gin is a perfect combination!
