One of the best named cocktails of all time because it is a daiquiri with the flavour of pineapple. Not super complex but it's got some coconut and funk from the rum, some floral and herbal notes from the bitters, and then pineapple. Fresh, candied and toasted pineapple are all present. I dialed the sugar back a bit to up the sourness and that worked great.
Surprising depth of flavour and very enjoyable! No pineapple liqueur so replaced with falernum, which worked fine. Tempted to serve on the rocks next time.
I’m not one to « differ » from Difford’s recipes normally but here I saw an opportunity for a new Tiki cocktail, being a big fan of them and having a rather nice collection of Tiki mugs, I just had to do it. I followed the recipe except I used Malibu instead of pineapple liqueur and served the drink in a high ball style glass which I then placed in a giant Tiki mug, with a Tiki monkey decoration (those I have been collecting from my favorite Tiki bar in Juan les Pin). A favorite of the misses and reasonably balanced enough for me, who doesn’t lean toward tropical/sweet cocktails.
Ok I used triple sec instead of the pineapple liqueur and angostura bitters.
Very nice cocktail but I would use a bit less Don Papa as it is very prominent.
