Made this with Havana Club Especial and agave syrup (you can substitute 1:1) as 3:1 honey syrup and agave syrup should both have around 77 brix.
Tastes amazing and is made in absolutely no time at all!

Instead of aguardiente or gold rum try with with aged rum and a pinch of salt. Keep the rest of the recipe. Let me know!

I found my favorite version of this cocktail and, regardless of the type of rum, it's 2 oz Rum, 1/2 oz 2:1 Honey syrup & 1/2 oz to 2/3 oz Lime juice. Shaken with one medium/small ice cube until I can't hear it anymore in the shaker tin & dumped over any type of ice.

Agreed! I used 2 oz rum, 1/2 oz 2:1 honey syrup, 1/2 oz lime juice. I love this ratio. And I think I could’ve gone up to 2/3 oz lime juice because it was still quite sweet.

Don't overthink this.
Any rum, any honey syrup and fresh lime juice and it's going to taste good.
The mix is perfect!

Honey syrup is central to the flavor, and it is apparent that my honey syrup is lacking :( I used cachaca (as noted by Iayn, likely more true to the cocktail's origin), which I enjoyed. Between the cachaca and the honey syrup this becomes quite distinct from a daiquiri - but this is certainly delicious in its own right. Highly recommended for rum/daiquiri lovers - experiment and make this your own.

I made it just like the recipe but tasted it with a bar spoon before adding ice and thought I'd like it more served up instead of over ice. It's an inexpensive and enjoyable tasting cocktail to make, and a good use for my Bacardi Gold. I want to taste more of the rum so I'll reduce the honey down to 1/2oz next time. I'll also make it again with Avua Prata from Iyan's suggestion.

Made it with cachaça because I feel like it comes closer to the flavour profile of traditional Cuban aguardiente, was truly phenomenal

Another drink that proves that you don´t have to fiddle with a lot of ingridients and fancy procedures to make a stellar drink. Be very picky with the choice of honey for your honey syryp - and everything will turn out just fine. Or better than fine. This i tastier than the ordinary daiquiri. And i still love daiquiris.

Honey is really what makes or break the cocktail. Perhaps even more crucial than the rum choice.

Five Star. Liked this much better than the daiquiri. Used a gold Barbados rum which gave the cocktail a wonderful rum falvour. On my favourites. Definitely a keeper.

An absolutely stellar drink. Deserves the 5 stars. Has way more to offer than even the Daiquiri, in my opinion! I just shook and dumped it in the glass. Was fantastic regardless.

Taking into account that you don't have access to a lime picked ripe three days ago but a good quality imported fruit, there is still the choice of rum and honey to make the syrup. If the rum seems rather obvious (Havana 3 years), it is much more difficult to choose the honey well. A honey too strong (e.g. Buckwheat honey) will be an intruder, whereas a honey that is too sweet (e.g. flower honey) will disappear behind the lime. A good choice would be a lime honey or a heather honey syrup.

I much prefer the recipe from Difford's Bartenders Bible.
-3 spoons of runny honey
-2 shots of white rum
-1 1/2 shots of lemon juice

I changed from spoons of undiluted honey to honey syrup due to its being easier to use and measure. However, I agree, the original version is delicious.
