1 oz Strucchi Red Bitter (Campari-style liqueur)
1 oz Cockburn's White Heights Port
3 oz Thomas Henry Tonic Water

How to make:

  1. Select and pre-chill a Highball (max 10oz/300ml) glass.
  2. Prepare garnish of orange slice wheel.
  3. POUR all ingredients into glass.
  4. FILL glass with ice.
  5. Garnish with orange slice wheel.

History:

Adapted from a cocktail created in 2014 by London bartender Cas Oh. This features in his excellent 2020 Co-Specs cocktail book, where he explains that Belafonte is the name of Steve Zizzou's boat in Wes Anderson's film The Life Aquatic starring Bill Murray as the eccentric oceanographer.

I like Campari. I like the heftier Negroni-adjacents (eg Commedia all'Italiana). For the Belafonte, though, I prefer a minor tweak to the recipe to rebalance the Campari to more of a supporting role. 35ml porto blanco, 25ml campari, 100ml tonic.

If you've been drinking Americanos or Bicicletas, you should also be drinking the Belafonte. Fruity from the white port, bitter (and great color) from the Campari - the tonic water ratio stretches the drink, diluting it more that the Americano or Bicicleta while preserving the central flavors. A great and low abv refresher!
