Glass:

Serve in a Collins glass

Ingredients:
12 fresh Mint leaves
2 fl oz Aniseed (anise) liqueur
1 fl oz Lime juice (freshly squeezed)
34 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
Top up with Thomas Henry Soda Water
× 1 1 serving

Garnish: Mint sprig

How to make:

Lightly MUDDLE (just to bruise) mint in glass. Fill glass with crushed ice, add other ingredients. TOP with soda, stir and serve with straws.

An anise laced alternative to a Mojito. The name refers to the opaque white colour of the drink after soda is added to the anis.

One of the better drinks I've tried with the Herbsaint I'm trying to rid of. The measures of mint leaves and lime are essential to balancing out the anise blast. The syrup measure seems a touch excessive at first, but there's little residual sweetness. Kind of a fresh cut grass flavor in the aftertaste. Anise liqueur must have a spirit companion that can be used to both compliment and cut down the intensity of the anise...
