Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of pineapple wedge.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

  1. Garnish with pineapple wedge on rim.

History

When I discovered this cocktail back in 2001 at Hotel du Vin in Bristol, England, it was made with house-infused vanilla rum and unflavoured sugar syrup. It was a great cocktail that led me to hero cocktails using the acidity of white wine in place of citrus.

Review

This beautifully balanced cocktail combines the strength of rum with the tartness of wine and the richness of pineapple and vanilla.
