Ingredients:
1 12 fl oz Light gold rum (1-3 year old molasses column)
34 fl oz Sauvignon Blanc wine chilled
34 fl oz Pineapple juice chilled
16 fl oz Monin Vanilla Syrup
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of pineapple wedge.

How to make:

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish:

  1. Garnish with pineapple wedge on rim.

History:

When I discovered this cocktail back in 2001 at Hotel du Vin in Bristol, England, it was made with house-infused vanilla rum and unflavoured sugar syrup. It was a great cocktail that led me to hero cocktails using the acidity of white wine in place of citrus.

A truly stunning discovery! I love the idea of letting the white wine provide the brightness and acidity instead of citrus. Elegant, original, and beautifully balanced.
