Serve in a Coupe glass

Ingredients:
1 13 oz Calvados / apple brandy / straight applejack
23 oz Giffard Rhubarbe Liqueur
23 oz Lemon juice (freshly squeezed)
13 oz Monin Vanilla Syrup
13 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Egg white replacement (vegan)
1 23 oz Brut champagne/sparkling wine
× 1 1 serving

Garnish: Dehydrated apple slice

How to make:

SHAKE first 5 ingredients with ice and strain into back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass. TOP with sparkling wine.

Review:

A calvados-based rhubarb and vanilla sour. The rhubarb and vanilla seem to amplify the flavour of the calvados rather than playing a distinctive role themselves.

Adapted from a recipe created in February 2023 by Kaitlin Wilkes for Avallen calvados. Kaitlin's original recipe calls for sparkling dry cider buti've substituted this for brut sparkling wine.
