How to make:
SHAKE first 5 ingredients with ice and strain into back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass. TOP with sparkling wine.
1 1/3 fl oz | Calvados / apple brandy / straight applejack |
2/3 fl oz | Giffard Rhubarbe Liqueur |
2/3 fl oz | Lemon juice (freshly squeezed) |
1/3 fl oz | Vanilla sugar syrup |
1/3 fl oz | Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer |
1 2/3 fl oz | Brut champagne/sparkling wine |

Review:
A calvados-based rhubarb and vanilla sour. The rhubarb and vanilla seem to amplify the flavour of the calvados rather than playing a distinctive role themselves.
History:
Adapted from a recipe created in February 2023 by Kaitlin Wilkes for Avallen calvados. Kaitlin's original recipe calls for sparkling dry cider buti've substituted this for brut sparkling wine.
