²⁄₃ fl oz	Giffard Rhubarbe Liqueur
²⁄₃ fl oz	Lemon juice (freshly squeezed)
¹⁄₃ fl oz	Monin Vanilla Syrup
¹⁄₃ fl oz	Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer
1 ²⁄₃ fl oz	Brut champagne/sparkling wine

Garnish: Dehydrated apple slice

Method:

SHAKE first 5 ingredients with ice and strain into back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass. TOP with sparkling wine.

This is still great without the Champagne topper. I’d even go as far as saying it’s not needed
