2 fl oz Light white rum (charcoal-filtered 1-4 years old)
1 fl oz Lime juice (freshly squeezed)
3/4 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
1 swath Grapefruit peel/zest

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select a COUPE GLASS.
  2. Prepare garnish of grapefruit zest twist.

Method

  1. REGAL SHAKE all ingredients (including grapefruit zest).
  2. FINE STRAIN into chilled glass.

Garnish

  1. EXPRESS grapefruit zest twist over cocktail and use as garnish.

Review

Shaking this Daiquiri with a wide grapefruit zest (termed a Regal Shake) has a surprisingly dramatic effect on the finished cocktail, which could be confused for a Grapefruit Daiquiri. The more you sip a Regal Daiquiri, the sourer and zestier it becomes it becomes. This aperitivo eases you in and then puckers you up.

I love this recipe. I used Rum Clarin (St. Benevolence) from Haiti, very funky tones. I did have an accident, which I think made it better. I was making my wife a martini at the same time, and I put half ounce of dry vermouth in. More complexity, more flavor.

Very refreshing. The extra grapefruit oil in the cocktail gives it a strong grapefruit falvour, but also adds a hint of bitterness. Thinking of adding a few grapefruit bitters the next time.
